We built this blend around two organic, fair-trade origins that bring out the best in each other — Colombian beans for sweetness and brightness, Honduran beans for body and depth. Roasted together in small batches right here in Pennsylvania, the result is a shot with golden crema, a rich and creamy mouthfeel, and a balance between sweetness and acidity that just feels right.

There's a reason this one keeps showing up on people's "favorites" list. Our Mexico single origin comes from Café Sierra Azul — a cooperative of about 200 smallholder farmers tucked inside the El Triunfo Biosphere Reserve in Chiapas, southern Mexico. The name Sierra Azul means "Blue Mountains," a nod to the striking blue-tinged peaks that surround the region and the pristine, biodiverse conditions that make this place special for growing coffee. Founded in 2010, the cooperative has spent over a decade building market partnerships that stabilize incomes and give member families a real path forward.
That care translates directly to the cup. You'll get the easy comfort of caramel and hazelnut up front, with stone fruit sweetness that keeps things interesting and a finish that rounds out with hints of pink grapefruit and milk chocolate. It's layered without being complicated — the kind of coffee that just works, morning after morning.
